Sechuan Button Cream, Gronda

Recipe by Franck Pontais.

  1. Put the milk in a pot and boil it
  2. Put the egg yolk in a bowl
  3. Add Sechuan Sugar and mix well
  4. While stirring, add boiling milk
  5. Put everything back in the pot and heat it up
  6. Mix some corn flour with some water in a small bowl
  7. Empty it while stirring into the cream in the pot and heat it up.
  8. When the cream's thickened, put it in the fridge.
