Spinach smoothie, Gastronomixs

Not only is this smoothie extremely delicious but it's also good for you. Creation by Maurits van der Vooren, restaurant Latour* (Grand Hotel Huis ter Duin), Noordwijk aan Zee, the Netherlands.


  • 100 g spinach juice
  • 1 avocado
  • 200 g yoghurt
  • 1 half lime juice
  • 50 g pineapple juice
  • 130 g  yogurt
  • 100 g milk
  • 80 g sugar water
  • 1.5 lime, juice
  • 8 g cortina (emulsifier)

Preparation method

  • Put the spinach juice, avocado, and 200g of the yoghurt in the thermo blender.
  • Mix thoroughly.
  • Flavour the mixture with the juice of half a lime and the pineapple juice.
  • To make the yoghurt and lime foam, mix the remaining yoghurt, and the milk, sugar water, lime juice, and cortina in a blender.
  • Mix thoroughly.
  • Transfer the liquid to a siphon and shake well.
  • Pour the spinach smoothie into a glass.
  • Pipe a dollop of yoghurt and lime foam on top.
  • Finish with some nice cress.

Serving suggestions

  • As an aperitif or pre-dessert.
  • As a healthy snack.
