Cauliflower Rice with Garden Cress

Ingredients

(For 4 people)

  • 1 Cauliflower
  • 1 Red onion
  • 1 Garlic toe
  • 1 Lemon
  • 1 Piece of Ginger (thumb length)
  • 1 Cup Garden Cress
  • 1 Red pepper
  • 1 Tablespoon Curry powder
  • 1 Tablespoon Coriander seeds
  • 1 Shaved coconut milk
  • 1 Handful of peas
  • 1 Big carrot

Method

Cut the florets of the cauliflower. Wash it and then finely chop it into a rice structure using a food processor or grater. Chop the onion and cut it just like the carrot, ginger and red pepper into small pieces.

Fry the onion in the pan, press the garlic and add it. Leave on low heat for 1 minute and then add the cauliflower rice, herbs and carrot.

After 20 minutes the ginger, red pepper, coconut milk, peas and the lemon zest can also be added. Let it stand for about 8 minutes on low heat.

Serve the cauliflower rice in beautiful bowls and garnish the meal with the Garden Cress which finishes off the dish with its delicious spicy radish flavor!
