Vegetarian hot dog


  • 4 carrots with greens (cleaned)
  • 8 romaine lettuce leaves
  • 1tsp sesame seeds
  • 1 tablespoon olive oil
  • 1 teaspoon of Saba di Modena
  • 1 tsp maple syrup

Ingredients at will

  • kohlrabi sticks
  • Shiso Leaves Green
  • Shiso Leaves Purple
  • Sakura Cress
  • Shiso Purple Cress
  • Rock Chives
  • Cornabria Blossom
  • cucumbers
  • radishes
  • avocado cream
  • Greek herbal cream (yoghurt, quark, oregano, basil, parsley, chives, sea salt)
  • apple cubes
  • sea salt from the mill
  • pepper from the grinder


  • Cut off the green of the carrots. Fry the carrots in olive oil with sesame seeds and salt. Drizzle with maple syrup and Saba di Modena, cover and let sit gently for about 15 minutes.
  • Heat the hot dog buns cut side down in a preheated oven (180°C fan oven) for 2 minutes.
  • Take the rolls out of the oven and top with lettuce and stews and finish individually.
  • Serve and garnish with edible flowers and cress.
