Cabbage, mandarin and sour leaves

Ingredients

(For 4 portions)

  • 400 gr green cabbage 
  • 100 gr kumquats  
  • extra virgin olive oil 
  • apple vinegar 
  • smoked pepper powder 
  • soy sauce 
  • Yka Leaves
  • Citra Leaves

Method

Cut the cabbage very finely, marinate it overnight under vacuum with oil, vinegar and pepper. Finely chop the kumquats and dress with extra virgin olive oil arrange them on the plate, garnish with the marinated cabbage and finish with Yka Leaves and Citra Leaves.
