Herb Hydari with Rucola Cress

  • Hand of mint
  • Hand of tarragon
  • Handful of parsley
  • Hand of chives
  • 2 cloves of garlic
  • 200 g 10% fat Greek yoghurt
  • The juice and grater of 1/2 lemon
  • Sakura Cress
  • And/or hand Ghoa Cress


Put the yoghurt in a clean towel and squeeze a large amount of the moisture out of the yoghurt. Hang the towel up for about 40 minutes. Meanwhile, finely cut all the cress and herbs. Then put the curd yoghurt in a bowl and add the juice and zest of the lemon. Grate the garlic cloves and add them to the yoghurt as well. Season the Hydari with some salt and pepper. Hydari is delicious with toasted bread or cracker, but also very tasty as a sauce with falafel, so…
