Ingredients

  • Fresh lettuce
  • Lobster
  • Cucumber
  • Sesame seeds
  • Moai Caviar
  • Borage Cress
  • Sea Fennel
  • Codium Blue
  • Kaffir Lime Leaves Peals
  • Caviar
  • Codium Blue mayonnaise (recipe)

Method

  • Cut lime into thin julienne
  • Make sweet and sour with vinegar and sugar water (ratio 1/1)
  • Soak julienne lime in sweet and sour
  • Cut a square block from cucumber
  • Infuse it twice in the vacuum machine in sweet/salty/sour with Sea Fennel
  • Burn it with a gas burner
  • Roll the lobster through the sesame seeds, burn lightly and place on the cucumber
  • Finish the dish with Moai Caviar, Borage Cress, Sea Fennel, caviar, Zallotti Blossom Pearls, withdrawn lime strips and frisée lettuce
  • Spray Codium Blue mayonnaise on the plate and place Sea Fennel and Codium Blue on top of it
