- Fresh lettuce
- Lobster
- Cucumber
- Sesame seeds
- Moai Caviar
- Borage Cress
- Sea Fennel
- Codium Blue
- Kaffir Lime Leaves Peals
- Caviar
- Codium Blue mayonnaise (recipe)
Method
- Cut lime into thin julienne
- Make sweet and sour with vinegar and sugar water (ratio 1/1)
- Soak julienne lime in sweet and sour
- Cut a square block from cucumber
- Infuse it twice in the vacuum machine in sweet/salty/sour with Sea Fennel
- Burn it with a gas burner
- Roll the lobster through the sesame seeds, burn lightly and place on the cucumber
- Finish the dish with Moai Caviar, Borage Cress, Sea Fennel, caviar, Zallotti Blossom Pearls, withdrawn lime strips and frisée lettuce
- Spray Codium Blue mayonnaise on the plate and place Sea Fennel and Codium Blue on top of it
