Shiso Green granita


  • 5 punnets Shiso Green
  • 1 tin lychees in syrup
  • 50ml coconut milk
  • 2g Agar-Agar


  • Mix together 4 punnets of Shiso Green with the tin of lychees. Use all the fruit and syrup.
  • Mix 200ml of this juice with some Agar-Agar and freeze the rest.
  • Once frozen, grate the granita with the back of a spoon and build the dish.
  • Add the Shiso juice and add a drizzle of coconut milk and a few leaves of Shiso Green.
