Zeeland oysters Helenic-style

  • Zeeland oysters
  • cherry tomatoes
  • olive oil
  • lemon juice
  • pure honey
  • feta cheese
  • black pepper
  • Paztizz Tops

For the granite:

  • juice from the oysters
  • lime juice
  • ouzo
  • sugar water
  • pepper
  • lime zest


Halve the cherry tomatoes and marinate with the olive oil, lemon juice and honey. Blend the feta with the black pepper. Mix all the ingredients for the granite, freeze in a container and stir regularly with a fork. Open the oysters. Arrange the tomatoes in the shell and place the oyster on top. Add two dots of feta, garnish with the granite and add the Paztizz Tops.
